Beef with bitter melon(Bitter gourd)  is a favorite dish since childhood. mom and grandma grew their own bitter melon. I like it as bitter as it can be (an acquired taste), so skipped the melon prep. this is a quicker version of my regular recipe that only requires 15 minutes marinating time and the beef is tender before the rice in the rice cooker finishes. start the beef cooking first and then make rice afterwards.

My husband actually liked the bitter melon prepared this way with the black bean sauce. It has been proven to lower blood sugar. A study published in the Journal of Ethnopharmacology found that 2,000 milligrams of bitter melon a day lowers blood glucose levels in people with type 2 diabetes.

Ingredients

150g beef slices one bitter melon
1 tsp salt 1 tsp sugar
Cornstarch Cooking wine
a little ginger two cloves garlic

step 1

Slice Bitter gourd, thinly first,  set aside for later use .

Slice beef thinly, marinated with cornstarch, oil, salt, shredded ginger, and a little cooking wine

Stir fry the garlic for a few seconds to release the flavor,  add in the beef, quickly stir fry until cooked, then set aside for later use

Reheat the wok, pour in the bitter melon and stir fry

When the bitter melon is almost cooked, add the fried beef, add some salt and oyster sauce

Tips for Beef with bitter melon Chinese style

Bitter melon is bitter so following the prep instructions are important to help reduce the bitterness.

For those who don’t know, bitter melon (or gourd) is bitter!  Added 1-2 tsp kosher salt over the slices and combined with hands, set aside for 1 hour. You need to use Kosher or Sea Salt…NOT table salt. Rinse and drain off excess water. Prepare your ice water bath. Blanch the bitter melon slices in lightly salted water for 1 minute and place in ice water bath to stop further cooking. Continue with recipe. I also omitted the baking soda because I couldn’t figure out the need for it, but I suspect it further reduces bitterness. I had 2 melons, hence doubled the recipe. I felt the amount of water was a little too much, but hey…more sauce is always good! I loved this recipe and will be making it again!
