Not many young kids like this dish because of the bitterness from the bitter melons. When I was a kid, I didn’t like bitter melons. But, my mother likes making this dish. After years, I began to like eating this dish. Life will always be both – bitter and sweet. Living well means accepting that both are teaching you.
Stir-fried beef with bitter melon Recipe
Beef + soy sauce + raw flour, marinate for ten minutes
Cut the bitter gourd in half and remove the scoop and seeds
slice bitter gourd into thin pieces
Put oil in the wok, add the beef and stir fry until it changes color

Boil water in a wok, add some oil and salt, blanch bitter melon in boiling water for 2 minutes
Put cornstarch and soy sauce in a bowl, add a little water and mix well
Put the millet and garlic in the wok, and stir fry until fragrant
Pour in bitter gourd and stir fry
Pour in the beef and stir fry
Pour in the sauce and stir fry, add some salt
Normally, it is better to put some fermented black beans.
1.When blanch bitter melon, add sugar to keep the bitter melon umami and remove bitterness.
2.After the beef is sliced, wash it with clean water. This step is to remove the blood inside and reduce the fishy smell.
3.The process of stir-fry requires a high fire, and it is best to finish it within a minute. If you fry for too long, the bitter gourd will be more bitter.
