Cantonese Cuisine Braised E-Fu Noodles

Braised E-Fu Noodles is one of the traditional Cantonese noodle dishes. Many people in Guangzhou have the custom of eating noodles on birthday feasts, which means “longevity”. The steps are simple, convenient and quick, and the taste is tender and refreshing. Therefore,Braised E-Fu Noodles are a common staple food in restaurants.

You’d be suprised at how few ingredients go into something so deliciously epic.

Ingredients for Braised E-Fu Noodles

E-Fu Noodles 240g Straw mushroom 250g
Chives 150g 3 cloves of garlic
Oyster sauce 25g Light soy sauce 15ml
Dark Soy sauce 6ml White sugar 3g
Shaoxing wine 6ml chicken soup (or boiling water) 250ml
Sesame oil 3ml A little cooking oil


How to make Braised E-Fu Noodles


step 1

Wash the straw mushrooms and cut them in half, wash the leek and cut into sections, mince garlic


Step 2

Mix oyster sauce, light soy sauce, dark soy sauce, sugar and clear chicken soup into a seasoning soup for later use


Step 3

Pour a proper amount of water from the pot to boil, let the straw mushrooms blanch for 1 minute, pick up, rinse with cold water, drain the water for later use


Step 4

Put an appropriate amount of water into the pot and bring to a boil, add the noodles and boil for 1 minute until the noodles are slightly soft, remove and drain the water


Step 5

Put it on a plate, pull it out with chopsticks, let cool and set aside

Pour a little cooking oil into the pot to heat, add garlic and sauté


Step 7

Add straw mushrooms and stir fry for about 1 minute


Step 8

Add Shao wine and stir fry evenly


Step 9

Add the seasoning soup to a boil


Step 10

Add the noodles and chives, stir fry evenly, simmer until the juice is slightly reduced


Step 11

Add sesame oil and stir-fry evenly


Step 12

Tips for Cantonese Cuisine Braised E-Fu Noodles

When boiling the noodles, do not take too long. The noodles can be picked up when they become soft.
