Braised Fresh Pumpkin

This is one of the simplest dishes of all to cook, relying entirely on the unadorned rich flavor of pumpkin, which blossoms when allowed to cook in its own juices.

Try to select sweet mature pumpkins for this dish. This is a vegetable dish that most children like to eat. It is a popular choice for family meals. You may experiment with different flavors, such as adding acinnamon stick, a sliced vanilla bean or some sliced ginger root to the pot along with the sugar and salt. The finished dish may also be garnished with minced spring onions.

3 tablespoons oil

1 kg(2 Ibs) fresh pumpkin, peeled and seeded, cutinto bite-sized chunks

1/2 to 1 tablespoon sugar

1 teaspoon salt

125 ml(1/2 cup) water

Spring onions

Light soy sauce

Prepare ingredients.

Heat the oil in a large pan over medium-low heat, add sliced garlic and stir-fry;

Add the pumpkin and cook, stirring occasionally, untilall the pumpkin is coated with oil and begins to soften.

Stir fry a few times and add a little light soy sauce and water into it.

Cover and simmer for two minutes, until the pumpkin is slightly soft;
